If you love Tacos or Burritos, you don't have to give them up when you go Keto. There are plenty of low-carb tortillas on the market. One of the ingredients for burritos is definitely NOT Keto and that is Refried Beans, but there is a tasty alternative you can try using eggplant.
You will need...
* 1 tbsp of extra virgin olive oil
• 6 strips of bacon
• 1 diced eggplant
• 1 cup diced onion
* 1 tablespoon chili powder
* 1 teaspoon ground cumin
* ½ teaspoon fine sea salt
* Pinch of cayenne pepper
* ½ teaspoon chopped fresh oregano
* ½ cup crumbled queso fresco or shredded cheddar cheese (optional)
Instructions:
First, skin and dice the eggplant into small cubes. Cut the bacon into small pieces and all them to the eggplant. Finally, dice one small white or yellow onion. Add the olive oil to a skillet and bring to medium-low heat. Add the eggplant, bacon, and onions to the skillet and begin sautéing. As the eggplant begins to cook, add the spices and make certain all of the eggplant cubes get coated. Once the eggplant, onions, and bacon are all fully cooked, transfer them to a blender or food processor. Purée until you get a slightly creamy mix with some chunks in it. Use this in place of refried beans in tacos and burritos.
Going on Keto doesn't have to mean giving up the foods you like, but it does mean you'll have to find Keto Friendly ways of making them. This means using alternatives, using fresh ingredients rather than processed foods, and buying spices to make your own seasonings like this recipe for tacos. Taco Seasoning from a packet you buy at the store isn't Keto, but the kind you can make yourself is. This is a recipe on how to make one serving, or a bulk amount you can keep in a jar. If you make it in bulk, a single serving is 1 tbsp.

Fried Chicken, a yummy Southern Tradition. However, the flour breading is off the menu because it isn't Keto, but there is an alternative that tastes fantastic...pork rinds. Yes, the humble Pork Rind is not only a great Keto snack, but it can be used as a breading for chicken, fish, anything that you'd fry in a fryer, plan or bake in an oven.
You will need...
* 2 to 4 cups of crushed original pork rinds
* 1 - 2 boneless chicken breasts per person depending on size
* 1/2 tsp ginger powder
* 1/2 tsp parsley
* 1 tsp paprika (smoked is ok too)
* 1/4 tsp chili powder
* 1/2 tsp sage
* 1/2 tsp mustard powder
* 1/4 tsp Chinese Five Spice
* 1/2 tsp basil
* 1 tsp salt & pepper
* 2 eggs, beaten for egg wash (optional)
Instructions...
First, crush the pork rinds. Put them in a strong gallon sized Ziploc bag and then use a rolling pin to crush the pieces. You don't need a powder, but finely crushed pieces the size of small seeds. Once done, transfer them to a fresh bag and set aside. Mix together your dry spices and add them to the crushed pork rinds, then shake until it is fully mixed. Now, you can either put your defrosted chicken into the bag and shake them to bread each piece, or add a egg wash first them shake the chicken pieces in the bag to coat them in the pork rind breading. You can then cook the breaded chicken however you like, but I use the oven.
Over Cooking Instructions...
Preheat your oven to 350F. Pour about a half-inch of extra virgin olive oil into a baking pan. You can line the pan with silicon-impregnated baking parchment beforehand, this helps with clean up afterwards. Place each piece of chicken into the pan. Once the oven is at full temp, place the baking pan inside on a middle rack. Cook for 45 minutes, rotating each piece every 15 minutes.
